Breakfast Tacos

One of my favorite healthy breakfast options, full of protein & super easy to make!
You'll need (for 1 person)
tortillas
shredded cheese
2 slices turkey bacon
1 potato
half an avocado
half a small onion
a tomato
cilantro
olive oil
sriracha
lime
salt & pepper

start by chopping everything into small cubes. the half chopped onion, tomato, and cilantro will go into a bowl with a squeeze of lime & some salt/pepper to make pico de gallo.

You can also add the chopped avocado in here if desired.
place a skillet with olive oil on medium high heat. Once heated, throw in the chopped potatoes, salt, pepper, and a little bit of onion powder.
Cover for 5 minutes & then lower the heat and cover again.
Occasionally check on them and flip so they'll be brown on each side. I also cooked cut the turkey bacon into bits and cooked both that and the eggs in the same skillet once the potatoes were done.

warm the tortillas in a separate skillet and sprinkle cheese on them so it'll melt. Add your toppings & you're done!
