Meal Prepping Sushi!

Sick of the regular chicken and rice and potatoes everyday? Here's some inspiration for another meal to incorporate into your meal preps :)

Sushi is one of my favorite foods, and also an easy option for meal prepping because it lasts over a week in the fridge and there are so many different options you can do!
Today I made two types:
spicy shrimp with cucumbers, avocados, and pickled ginger
& imitation crab with cucumbers and avocado
both topped either spicy mayo or sriracha.
Some other options you can use for filling are:
salmon or other types of fish
fried egg
any type of pickled vegetable
coleslaw or crab salad

The seaweed I buy is from Wegmans and comes with 10 sheets, and normally a single person only needs 2 sheets to make enough sushi so one package is definitely enough for a single person

It's honestly not difficult to make and you don't need to make it all fancy.
1. Simply prep your ingredients first, make your rice a few hours ahead of time so it isn't hot. You can buy "sushi rice" which is easier to spread on seaweed, or you can also use white rice--just make sure it's sticky enough.
2. When the rice is cool, press it onto the sheet of seaweed in a thin, single layer.
3. Add your fillings in a single, horizontal line in an even layer as pictured above.
4. If you want the roll to be perfect, you can use a sushi mat to roll but I honestly just rolled the first half on top of the layer of fillings and kept rolling, squeezing everything together while rolling until everything is enclosed and you have a nice tight tube.
5 . Then cut the tube into about six to eight pieces, and top with your sauces/green onions/sesame seeds/ or whatever toppings you want! Dip in soy sauce or wasabi!
