Quick & Easy Dinner

vegetable fried rice, garlic roasted potatoes, grilled chicken, and asparagus


This well balanced meal is a perfect option if you need a quick dinner idea, and the sides are easilyk replaceable with other vegetables such as broccoli or a salad :)



Garlic Potatoes:

  • cut potatoes & boil for 10 minutes in stovetop or until soft enough to prick with a fork

  • Drain water out of the potatoes and place in a bowl. Add 3 tsp olive oil or melted organic butter, garlic powder, salt, black pepper.

  • Place in oven on a high broil for 10 minutes or until slightly roasted on both sides.


Rice:

  • My favorite is basmati rice, follow instructions on bag/box to cook!

  • In a heated skillet with olive oil, cook a clove of mixed garlic, quarter of a chopped onion, sliced peppers, spinach, or whatever other vegetables desired. Add rice in after vegetables are cooked, salt, pepper, and soy sauce.


Asparagus

I cook on stovetop with a little bit of olive oil, salt, black pepper, and soy sauce. Place on low heat and cover until cooked.


Chicken is grilled stove top with garlic powder, onion powder, salt, pepper, paprika, and a touch of cumin.
