Stuffed Peppers

For pepper lovers, this is a super easy meal to make with lots of leftovers!



Slice the tops off the desired number of peppers by slicing around the core & washing them throughly. Lightly brush them with olive oil & sprinkle salt and pepper. Stick them in the oven on 400 for 15-20 minutes until lightly roasted, or 10 minutes on a high broil.


While peppers are roasting, boil water to cook a cup of rice and heat a skillet with olive oil to start cooking your ground beef.


Once skillet is heated, add

  • half a chopped onion

  • 1 spoon of minced garlic

  • 2 tsp tomato paste



After five minutes, add the ground beef and cook until brown. Stir in 1/2 tsp of oregano, salt, pepper, parsley, and 1/2 can of diced tomatoes or tomato basil sauce.


Once the meat is cooked and simmered with everything else, turn the heat down & add your rice.


Pull your roasted peppers out the oven & stuff them! Top with your desired cheese, I use shredded monterey jack & shredded taco style cheese


Put peppers back in oven on high broil to roast them for a few more minutes & melt the cheese. Top with cilantro for garnish & serve! :)
